I've been lurking on the site for a while picking up tips and tricks while smoking various things, and decided to finally join.
I've got a MES 40" and been using it well for almost 2 years. Just found out about the AMPS and got one and because of it, I'm now attempting to do some cold smoked salmon because the weather is perfect. A whole new category of smoking has opened up!
Also, I'm now on first name basis with my butcher because of the smoker. This is probably a good thing.
