Chicken liver is a versatile piece of the chicken you can fry it you can cook it you can smoke it
And you can grill it .
This time i used a recipe from my my Romanian heritage
Crepe filled with chicken liver and mushroom sauce for Dessert crepe filled with cream cheese cherry.
For the liver
1 lb chicken liver (clean)
1 onion (big)
4 cloves of garlic
2 chili
Salt
B pepper
For the mushroom sauce
½ onion
Mushroom
Salt
B pepper
Smoked paprika
Cream
For the cream cherry
Cream Cheese
Cherry jam
For the crepe ( if thin it will make 8 crepes)
2 eggs
½ tsp sugar
½ salt
1 cup flour
2 ½ cups of milk
1 tsp oil (not EVOO)
Mix well and us an oiled pan .
let it reduce and lose the water
add the cream salt and pepper
add the paprika for color and taste
Roll the liver in the crepe
Add the mushrooms
roll the cheese
