Carolina kicker Sauce

ok at one time I had two awesome recipes for Carolina kicker Sauce one was the vinegar and red pepper style and the other was the mustard vinegar style,

 

I seemed to have misplaced both of them, and can't find the place I nabbed them from, any of you have one you'd like to share?

Well, as a North Carolina smoker, IMVHO, I'd say that recipe from the link SupercenterChef posted looks fairly close but I would add a lot more red pepper flake to that recipe.  You can also add a few healthy dashes of your favorite hot sauce to that vinegar recipe.  You can even can add some pickled green hot peppers to it as well.  I like to do that and it gives it another level/layer of flavor.

 

Can't speak to the mustard sauce since I don't do that type of finishing sauce.

well fellas thanks for your replies, but after I posted this I found a couple of recipes that were close to the ones I had lost

here they are tell me what you think

 

North Carolina Vinegar Sauce

 

Ingredients

 

2 cups apple cider vinegar

2 tablespoons dark brown sugar

1 tablespoon ketchup

1 tablespoon Texas Pete’s

1 teaspoon red pepper flakes

1 teaspoon ground black pepper

1 teaspoon kosher salt

1/2tsp ground ceyanne

 

 

Carolina  Mustard style

INGREDIENTS:

 

2 cups cider vinegar

1 cup brown sugar

1 cup mustard

1/2 teaspoon cayenne pepper

1 1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon Worcestershire sauce

1 teaspoon Tabasco sauce

The recipe for the vinegar sauce looks about right except, again, I would suggest more red pepper flake.  But, that's all about personal preference.  Can you Texas Pete hot sauce up there Harry?

I think I have seen texas pete around here, but we use Chalula hot sauce, and when I want something a lil more garlic flavored I use Siracha

Those both look good but I would have to sub some good BBQ sauce for the ketchup (I don't even allow it in the house) and double the pepper flakes like Salt mentioned

Good choices of hot sauces Harry.  Texas Pete is a staple around here, you can even buy it in gallon jugs in most grocery stores... but I'm not real fond of it.  As for the ketchup, I don't put it in my Carolina Vinegar sauce, but I think it's probably in there for the color. I like Scar's idea of substituting a good BBQ sauce if you're going to use either. 

 

Like I mentioned above in my earlier post, I like to toss in a good helping of hot pickled pepper rings or small peppers.

 

As for the mustard sauce, I can't comment since I never make it.

why does everyone always pick on ketchup? it is just another tomato sauce with different spices...LOL, it has it's place, for me, fries, burgerz and dogz, and I love it with meatloaf and fried taters

 

plus it is way better for you than other sauces, due to the lycopene, just sayin...LOL

I actually get ill or almost ill just smelling it for some reason. I can always pick out its sugary taste in just about anything it is in. I make a lot of tomato based sauces to replace it. My daughter used to eat it on her eggs in the morning and I finally had to tell her if she wanted to eat it she was going in the other room so I could eat.   Food allergies - so much fun

Well you can't grow up round here An'at, and not enjoy the great taste of that yummy tomato ketchup they make Dahn tahn at the heinz plant, beside where them Stillerz play, yinz just need to give it a try, tell yer nebby neighbor to watch aut dahn'ere, the side walk is slippy An'at

 

The above Statement was written in "pittsburghese"  which is our local language,which is best heard through a pittsburgh accent, in normal english the above statement would read

For all of you who have never had the "Pixburgh" experience, I thought I would find something you could actually hear,

I feel I don't have much of this accent but I have had people from other parts of our country make fun of me for some of our words and accent

this is a bit "dramatized" but I have heard a few people with this strong of an accent, mind you I think the way we talk is funny,  but like I heard someone say I also think of it as a badge of honor being from  da "burgh"

Sounds good...going to mix up a couple of these for some pp that I need to make! Love the pittsburghese...I used to live in the North Hills and don't forget about Sliberty (East Liberty). Miss the chipped chopped there too!
