Hey guys, glad to be a part of your forum.

Been lurking for the last several months, figured it was time to join.

I'm new to smoking. Just got a new Yoder YS480 pellet grill and hope to be up to speed and smoking soon.

First off welcome to SMF there Cowboy. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

I've been through the 5 day e-course already, and have bought Jeff's recipes.

A little history on my self. The last grill I owned took a crap about 5 yrs ago. I'm a contractor here in Wyoming (go pokes!!!) , and last summer I worked out a trade on some work for part of a 4-H steer. So, time to get another grill. Luckly in my search for a good grill, I stubble across some smoking forums and got drawn into going a different direction.

I've been reading the forum a little everyday while I've been waiting to get my smoker. Now that the smoker is here, its time to see if I can do more than just grill steaks and burgers.

I grew up in South Dakota where they would serve what was called "chislic". It was basically sheep or wild game cut into cubes, put onto skewers, and deep fat fried. Then seasoned and served with crackers and beer.

Wikipedia has a write up on it.

Other than that I don't have much use for lamb.

There's an old saying here
