doing a small batch of jerky today in my smoker(30 mes) i have always previously made it in my dehydrator  so smoking it is new to me

 how long do you apply smoke  to it to get a nice smoke flavor with over doing it ? running temp @ 150 and using my AMNPS  with bourbon barrel pellets

I did my first batch of jerky in the smoker a few months back and I think I ran around 175-190 degrees and they were done around 3-3.5 hours and they weren't to smoky at all. If anything they don't have enough smoke. I made  a note that next time I want to run at lower temps like you mentioned (150) and hopefully there will be more of a smokey flavor.

I am not much help on jerky, unless you need help making it disappear...LOL.

From what I have read time runs from couple hours to a couple days, The normal seams to be 2- 4 hours though. Someone with much more experience will be along shortly to give you a much better answer.

Ikrus, morning... You might try drying the strips in the smoker at 120 or so for a few hours with the vents open... then smoke at 150-160 deg until done... Smoke doesn't like moisture on the meat....  Dave

Yes, the meat needs to dry out before the smoke will adhere.  Run it for a few hours at 140 to dry the meat, than apply the smoke for a few hours.  Good luck.

I run mine around 130 for 3-4 hours then kick it up to 160 for about an hour. I do put cure in mine so I don't need to cook it.

at what point do you start adding smoke?
