Another California smoker on board!

Sign up for the 5 Day E-Course to get a great foundation.  If you look at the Pork section there is a basic recipe for smoking a butt that's a good place to start.

Good luck,

Curt.

Way I do pork butts is slather them with cheap mustard with 2 Tbsp Worcestershire sauce per 16 oz bottle. apply rub, wrap in Saran wrap and put in fridge for at least 12 hours. Remove from fridge at least 1 hour before and re-rub. smoke it low n slow at 215 till IT is at 200. Pull from smoker wrap in 2 layers of HD foil place in cooler with towels and let rest for couple hours.  I also spritz every hour after 4 with this, as well as put in foil to rest.

Spritz

8 oz Apple Cider (100% apple juice good substitute)
6 oz Jack Daniel’s Black (Evan Williams’s good substitute)

4 oz Water
2 oz Cider Vinegar

Instructions

1. Mix all ingredients together in spray bottle.

2. Spray meat every hour till done
