hog meat?

I have some hog meat that I want my butcher to make into smoked sausage for me but he said he cant do it for 2 weeks. can I freeze the meat till he is ready?

 

I cant wait till I get my grinder and stuffer so I can stop relying on the butcher!!!!

I don't see why you couldn't do that. We smoke frozen meat all the time. but I'm no sausage head either, so there could be a reason why you couldn't. I'm betting one of the sausage guru's will be along shortly.

Yes just freeze it you'll be fine I usually freeze mine then make the sausage when I get good and ready biggrin.gif

Yes. You can freeze the meat until you use it
