These aren't really fatties, but I figured I'd put it up under this category.
I took some Bob Evans hot sausage and made a meatball stuffed with colby jack cube & roasted Pasilla Bajio pepper. This was the first one & I tried to wrap the meat around it. After I made this one, I realized it was much easier to make two small balls of sausage. Then flatten into pancakes, put the stuffing in the center, then flatten the two together(much like a juicy lucy if you know what that is), finally rounding them out into an orb.
All done! This was how many I was able to make out of a 1 lb tube of sausage. I suppose I could have made the meat portion thinner, but I was worried about the filling oozing out.
After about 2 hours of unintentional cold smoking.
I threw them on the grill to finish them off, and I kept them in the oven to stay warm while the rest of the food cooked. As a result, they were a little over-done, but still pretty tasty.
