2nd Smoke atempt - chuck shoulder

Hello all.  I still don't see my first smoking post anywhere.  I may have done it wrong or may still be pending. Anyways, here is a chuck shoulder I smoked over the weekend.  It turned out pretty good.  I coated with mustard and Grub Rub and set overnight.  Then smoked to 200 and wrapped it for about 30 mins. I used my Bear Claws to pull it and they worked great.


I still need to seal the smoker up but I took the baffle out I made and it seemed to work better. I may be back to the drawing board on that one.

That's some awesome looking chuck! I have one on the smoker right now. It will come off at 200 degrees internal. I'm keeping the temp down to 230 . After injecting and letting it rest in the fridge for 4 hours, then coated nicely with a honey rub, this should be super tasty and juicy.

Nice looking chuckie. Do yourself a favor and take them to 210º I have never had an issue with pulling a chuck at that internal temp and believe me I have some pull easily, some partial pull and some not pull at all.
