Got these two beauties at Winn Dixie at $1.79...a great buy for around here and they are fresh!!

SPOG last nite and into the WSM with apple this morning at 6:30 am at 230.

Both hit 165 within ten minutes of each other around 11:30.

We like foiled with apple juice so they are now wrapped and cooking. Bumped the the temp up to 245 with the help of my awesome Guru!!  (That better???hehehehehe)

Both are now at about 195.  No stalls yet..  Wheeeeeeee!

LOL, back in the Olden Days (about 3 years ago) I remember .99 cents a lb getting me excited. Not no more. I think the lowest we see now is $1.49. At any rate, they look great. We'll be ready for some more Q-View.

Looks really great Craig!!!!

Might want to say that ya bumped the Guru up instead of the WSM, in case some newbs think that you can just bump the WSM up?

My 2 cents

Happy 4th!!! Craig

Whoooo hoooo!!

 This stuff is delicious!!

Let it rest in the the cooler for a little over 2 hours.

Still very hot when I took it out.

Got the junk off then pulled them and mixed  4 or 5 heathy squirts of finishing sauce.

Then on to the perfect BBQ sammie!!

Bun, Q, sweet slaw and a dash of hot sauce....heaven!!!

It's been a long day of cooking.

Tomorrow we are going to watch the parade at the beach, relax and eat this food.

A quick note to the new guys..

I came here about a year ago,not knowing how to make good Q and a desire to learn how to make andouillue sausage.

I am doing pretty good with it.

Not only that---- I have made some great friends and broken bread with a bunch of the regulars here.

I am a very grateful SMF member...

Down below are the 3 biggest starting tools this place offers!!!

  Have a great holiday!!
