    Baby Backs and Beans

Nothing better than a rib smoke on a Sunday. Made a rack of baby backs, seasoned with Jeff's rub, Dutch's Wicked beans and some home made slaw. Used a mix of Jealous Devil and Royal Oak lump charcoal and a half and half hickory/cherry wood mix.

    Freezing Uncooked Ribs

I picked up a 3 pack of Costco baby back ribs yesterday for a smoke I was going to do today. Now plans have changed so I am thinking of freezing them. Any problems freezing them in the packaging they come in or is it better to individually vacuum seal each rack? Thanks.

    Wood chunk storage

When I restarted smoking this year I originally picked up a bag of hickory chunks they had at the local Walmart. Ran through that pretty quick so I purchased a nice mixed box of hickory and cherry online. My problem is where and how to store it. We live in South Central FL in the Tampa Bay area...

Reheating pulled pork for a party

I'm making a few pork butts today for the game Sunday which should be done some time late tonight. After they are done and sit in the cooler for a few hours I was going to pull them and put them in a pan in the fridge to cool, then vacuum seal them and freeze them. We are heading to a friend...

    Another WSM18

Figured there hasn't been much activity here I'd give this subforum some love. I just bought my 2nd WSM18. My first was was back in '08 and it didn't make the move when we relocated to FL. I really like the Q this thing produces, usually without too much effort.

    Another charcoal question

Sorry to bring this up again... I smoked up a pork butt last weekend. It came out great but I was not pleased dealing with the Royal Oak lump that I used. Tons of small pieces. I am cooking up 3 butts tomorrow for a Super Bowl party so I picked up some Jealous Devil Lump because of all the...

    Water Bowl for WSM

My first WSM had the shallow 1 gallon water bowl. Unfortunately I no longer have that smoker and the new one I bought has the big water bowl. Of course, since I am an idiot ,I didn't take that into account when I built my charcoal basket and I have almost no clearance between the bowl and the...

    Royal Oak Lump dissapointing

I always use to use Royal Oak Lump as my fuel source in my WSM. I am using a bag today for my smoke and its all crappy small pieces. What is everyone using these days?

The return - Getting ready for smoking

Well the final piece of the puzzle was delivered today, my new Thermoworks thermometer. The Jelly Belly beans they included was a nice touch. I hope it's like riding a bike. I had to replace pretty much everything after my long hiatus from smoking meat but now I am finally ready to attempt my...

    Pork butt prices and quality

It's been a while since I have shopped for pork butts. Last time I did I live in New York where the prices were high and the choices were few. Now that we are in Florida I'm happy that pretty much anywhere they sell meat they sells butts. I wen't shopping today and checked out a couple places...

    Finally decided

After returning to the forum and smoking I was trying to decide on what smoker to get and finally picked one. I had one of these 15 years ago and it never let me down so I figure the relearning curve would be shorter.

    Long shot

It's a long shot but figured I'd ask. There use to be a member of the forum named Steve. His screen name was WalkingDude. He passed away years ago. When I was last active on the forum, he shared his wife's tater salad and cole slaw recipes. Over the years I have lost them and was wondering if...

    Gas Grill firebox Repair

We recently purchased a new home and one of the items I got excited about was a built in 30" Lynx NG grill. While my wife was cleaning her up we noticed corrosion to the front part of the firebox. I looked it up on the Lynx site and of course it is not a replaceable part. The rest of the grill...

    Heat Deflector

I've been researching a new kamado style smoker. Probably either the BGE or the Kamado Joe. Among the many accessories I've seen the heat deflector and read many post and seen many you tube videos about how it is essential. While I have never owned a kamado style smoker I did have a Weber...

    Looking for a new smoker

Greetings, I'm moving into a new place soon and in the market for a new smoker. I haven't really done much in the past 10 years but looking forward to getting back into it. I use to own a Camp Chef Smoke Vault and a 18" Weber Smokey Mountain. Both produced excellent results. The new place...

    Returning after a long hiatus

Hello y'all, I'm returning after a long break. I use to be very active here about 10 years ago. Took a break but I'm ready to dive back in. I'm looking to purchase a new smoker but I'll post those questions in the appropriate sub forum. Glad to see this place is still doing well and is still...

    Cheese and more

It's been a bit since I've had the chance to light up the smoker. Didn't have much time today either but I was able to sneak in a cheese smoke. Didn't have a lot of time to finesse the temps down to 90 degrees so I was a little high at 105 and as a result I got some melting. Mix of pecan and...
