I'm going to be smoking some scarbelly wings, sausages and a jalapeno popper cheese dip today while watching some college football. The jalapeno popper cheese dip has a topping that consists of shredded Parmesan cheese, Italian bread crumbs and butter. I have not tried smoking anything with a topping like this before so I'm not sure if it's going to be soggy or if it will crisp up. I could always add it at the end and then hit it with the broiler to brown it. Anyone have experience with this? Thanks!
