Venison Jerky - First attempt

  1. Let marinade overnight - water, brown sugar, salt, pepper, soy sauce, Worcestershire, garlic powder, onion powder

    Smoked with apple chips at 150 for about 6 hours. Came out great - passed a few peices out at the office and was a huge it. Only did a pound - have 4 pounds defrosting for next batch :)

  2. Looks good! Have you thought of using cure?

  3. I originally was going to instead of salt but I couldn't find the cure at my local grocery store. What am I losing if I don't use it?

    You can make yourself sick or worse! I think you'll have to buy your cure # 1 from a supplier like  sausaugemaker , butcher-packer ,allied -kenco or PS seasonings to name a few. Not sure where to buy mortons tender quick cure. Nice looking jerky! You're hooked now .[​IMG]
