As soon as I saw this package of USDA prime beef ribs, I nabbed it! Of course, there was only one

After I opened the package, there was one giant rib hiding under the main rack. Bonus! I seasoned them up with Moose's Rib Rub # 1 and let rest for a while. Then, I fired up the uds and added some hickory and maple to my charcoal. Once the temp was up to 300, I put the ribs on:



I smoked them for 3.5 hours, and basted with Bone Suckin' Sauce doctored with black pepper and cayenne at the last 20 mins, after getting the temp of the drum down to 250.

Let meat rest for 1/2 hour, while the missus prepared some of her amazing Asian Slaw and some corn on the cob.

Very nice fine and dinner. Prime beef ribs I have never heard of them before now. But you did them really well and I bet they were delicious too. Is that a bean sprout coleslaw or what????
 
Looking good there. I see you use corn on the cob holders as well. I catch heck from my in-laws for using them. I grew up using them and love them but they just use their hands. I say hey if you want to burn your finders on the hot corn go right ahead I will sit over here and scarf mine down in no time with my cob holders.
 
I was thinking the same thing!! My wife (and her mom) think they're silly, but that's just the way I was raised. I honestly thought that everyone used them until I was probably 22 or 23.
