Store Bought Fresh Sausage

    Hope I'm not repeating a previous threat.....but.....!

    I have smoked some fresh sausage (polish) 250* for 1 1/2 hrs or so......Absolutely great flavor !!!, but of course the casing was a little tough....

    Is there any way to smoke fresh (Safely) just as it comes from the store without toughning up the casing...???

    Q Dawg,
    Below is a link to the second time I cured & smoked fresh Venison sausage.
    In other words, I took bland Venison fresh sausage my son had made at a butcher shop, and turned it into smoked sausage, by curing it & smoking it exactly like I cure & smoke bacon. IT WAS GREAT!
