Just bought a Masterbuilt electric smoker and yesterday, I seasoned it for 3 hours, (put in 1 cup of mesquite chips the last 45 minutes).

I had bought a smoker years ago when I was first married and owned a home down in West Palm Beach, Florida. I remember using it the first time and that was to smoke a chicken. It turned out very good!

The next time I tried smoking a turkey at Thanksgiving. It was the best tasting turkey I've ever had. Everyone else liked it too!!!

Unfortunately, later that day, all of us had diarrhea bad... I don't know what I did wrong at that time, but I kind of lost the smoking urge after that...

I'm older now, (63 soon to be 64) and another 1 1/2 years and I'll be retiring from full time work. :) I'll have a plenty of time to use my smoker the correct way.

I live in Ormond Beach, Florida now a block from the beach. I go saltwater fishing a lot and have fillets in my freezer.

I want to be able to smoke the fish I catch.  

I'm very glad I found your forum and I hope with you guys help to get it right this time...

I'm west of you in Sebring, lived in Ft. Laud. by the beach for 35 years. Moved here 11 years ago.

Welcome from SC, Jerry. It's really good to have you on this great site. Do you possibly remember what the IT was on your turkey? The breast needs to be 165*+ and the heavy part of the thigh 175*+. I also assume that it was completely thawed.
