As always Bear, looks great. Curious though, do you get it out of the fridge early and let it get to room temp, or close?

No, I never get anything out early. All goes right from the fridge to the smoker, unless it's cured & I'm still working on the Pellicle.

Your "step by steps" are what gives me the get up and go to have a go at smoking.

When all is said and done all a person has to do is master the smoker and then follow the s x s's and hey presto!

Look for sales---I buy just about all of mine during Christmas Week of every year. The best prices are usually that week. Once in awhile there are other sales too.

Prime Rib is definitely one of the easiest things to smoke.
