Smoked Butt and Ribs.. before and after

    Here is the qview of before. I threw a few red potatos in there as well. gonna mash them for dinner. I also threw a little red onion in with the drip pan. And added a couple coals to the wood box to see if i can get a deeper ring.

    The wife is doing a ham in the crockpot so no smoking here today [​IMG] .

    Just as well, i have plenty of other thigns that need doing ......

    Ok, the ribs are done.. and turned out awesome.!! don't go getting all grabby on them.. they are mine. :)

    i think i can say that the charcoal helped a lot getting the ring. i put in 3-4 pieces in with the wood tray. I bought the ribs about 15 mins before i put them in the smoker. they where cut and had a couple bones in them.. if i was doing a rack, i would have done differently. But, they taste DAMN GOOD. and i got a really nice pretty ring :) A few more hours for the butt and hopefully it will turn out just as good.!!

    now that the pork butt is done.. i put the rest of the qview up. :)

    i am pretty much satisfied with the butt. however, i forgot to spray it with anything to keep it moist on the outside. never done that and was gonna try it this time.. so the outsdie of the butt is a little on the dry side. but, if you can see in the first pic, it just fell apart. i just put my mustard sauce on some more and just cut it up. still very good. the potatos on the other hand... got tossed. must have cooked them too long. they wheren't really a priority anyway.

    first pic is right outta the smoker. just fell apart when i took it out. good sign right.?

    2nd pic is after i kept it in the oven for about 20 mins with the extra sauce on it.

    and then all cut up.. pretty nice ring on it as well.. i think the charcoal really does help.!

    all in all this was a very good smoke for me.. i have found out what others are saying has been true. my temp gauge on the smoker runs about 30-50 degrees colder than it is. the next time i'm going to switch to a lot smaller pieces of wood. the big ones don't catch very good and i had to sift through the bottom of the bag to get the good ones. i'm also gonna spray next time.. and also use a few bricks of charcoal too. that really helped i think. after i changed the first bit of wood. i hardly got any smoke off the big pieces i had left.
