Rib's N' Chops, lots of View!

    Hey all, got the day off and figured I might as well be smokin' since the weather is clear.  I decided on a rack of baby backs and 3 center cut chops.  I made the rub as soon as I woke up and went with a little different flavor profile.  As with most of my rubs, this one is a brown sugar base with kosher salt, granulated garlic, paprika, old bay, black pepper and a little accent.  They had a few hours to nap in the fridge before I fired up the smoker.



    On the Vision Pro C and ready to roll.  I am using a combination of apple and pecan this time around.  Stay tuned!

    I pulled the chops off after 45 mins at 225, heated up a cast iron skillet with some bacon grease.  I placed the chops in and just seared them for about 45 seconds on each side.  Here are the results. . . .








    These were so incredibly tender and juicy!  Awesome flavor profile.  I will be doing this again in the very near future.  Ribs are still on, they have been sprayed down with apple juice a few times and don't have much longer to go.  Not foiling them, just letting them ride the whole way through.  More to come!

    Just got the ribs off, sliced them up and of course sampled them.  Very pleased with the results.  I made some cornbread as well for dinner tonight.  Hard part is not eating all the ribs before then

    It all looks great man ! Just being honest here but I don't think I would have the self control to not eat a bunch of them ribbies before actual dinner time ! Those chops look amazing as well.... Very nice ! :sausage: :biggrin:

    Thanks Justin, like you, I did not have the self control.  The boys and I ate half the rack already  [​IMG]  , so needless to say there wont be too many of them come dinner time.  Going to eat the chops, ribs, some mac n cheese, green beans, cornbread and wash it down with some sweet tea.  What a day!

    I must be hungry for chops! Those are beautiful. Nice job. Look at the juice dripping out of 'em!

    Thank you, I was pretty happy with the chops. .. they were so incredibly juicy!  Since it was just me and the boys I went for a more firm rib that doesn't have too much tug.  When momma's home we do them closer to falling off the bone. 
    Thank you Foam, they were quite tasty!  I'll be doing them this way for sure in the very near future

    now how about a good cornbread recipe. i have tried a few off the web and are either 1/2 white sugar or my other option was that they come out like masonary building blocks..

    I used this recipe yesterday and was very pleased with the results. . . .  http://www.chow.com/recipes/28597-basic-skillet-cornbread   Instead of using all that butter, I greased the cast iron skillet with some bacon grease leftover from breakfast.  Once the bread was done in the oven, I hit it with some honey, waited 15 minutes and flipped it over onto a plate and hit the bottom side with honey as well.  Very moist cornbread. . . not too sweet and very flavorful.



    Awesome recipe I will be using again for sure.  Good luck!

    I was so impressed, all I had was a loin and immediate went and sliced off four steaks, and made a brine for 'em!

    The change in the weather is definitely a plus.  I couldn't help myself and had my smoker fired up through the winter. . .. I just cant stay away  [​IMG]
     
  17. they look amazing I can smell them from here one problem I have I'm a newbie and I'm not sure when everything's going to be done so a lot of times when it comes off the smoker I can't help myself but to eat it
