Prime Rib - How to reheat?

    Ok, 2 questions.

    First question, I have a bone-in, pre-smoked PR that went to 125 IT.  It's frozen solid.  What's your recommendation on reheating to 133-135 medium rare?

    Second question, I have a bone-in PR that I took to 125 IT that is NOT frozen and handed over as a gift.  Once it gets to its new home, at what temp would you recommend reheating to an IT of around 133-135 medium rare?

    I like med. rare myself. Don't forget that you will get a little carryover at it rests. Maybe take it off at 130 to get 135? Just a guess.

    Heck I would probably just smoke it again if it were me and take it up to 130-135, good long rest in foil. You might ask one of the chef's that frequent the site. Chef JJ, Willy, to name a few. I have never done it like this before.

    Reheat temp could depend on  what the chamber temp was when smoked.  If you had a low chamber temp, you should have a nice edge to edge color and you don't want to ruin that during the reheat, so fire the oven up to between 200 - 250 and bring the PR up to temp.    If you cooked at a higher chamber temp, the outer edges of the PR are already gray/brown, so there's little to no harm reheating at higher temps.
