Pork butt practice!

    I have been contracted by my boss to cook 8 butts for a graduation party coming up on June 11. So, I need to practice!!! Gonna be a great day today in Go Blue country so here we go.
    Making two different kinds. One kinda Texas style and one more sweet southern style and I'll let him pick which one he likes.
    One on the left is 10lbs and rubbed with Chathams southwest rub. One on the right is 8lbs and rubbed with a mix of Willinghams regular and Willinghams Cajun rub.

    Oh almost forgot, using a mix of oak and hickory today.

    Thanks Red, these are actually my first butts believe it or not. It's gonna be a real nice day for it.

    Ok so, 11 hours total. I wrapped at 155 it added some apple juice to one and some beer to the other.
    Smoked to 203 on my maverick and pulled and let rest for about an hour.
    . Got a set of bear claws I've been dying to use and pulled her all apart

    I tried a bunch of different combos with sauce and with/without slaw on top ( which I like) I have a winner I hope the boss likes it.

    They chose the willinghams style hands down!! I had all 9 guys I work with try both with lots of different BBQ sauce and the southern style won hands down! My wife went as far as to say not to do anything different next time. She loved it!!!

    So, it's on. Friday June 10 I'm cooking 8 butts in my smoker. She'll be REALLY happy that day! I'm a little nervous, never cooked that much at once before. Any help is very appreciated. I hope I have what it takes!

    What you need is someone to practice on and taste test. If this is your practice, I would be happy to volunteer for future practice sessions. No need to thank me.

    The day is here. Practice officially over!! Ten butts all around 10 to 8lbs. Rubbed last night and got ready. Getting them on a little later than I wanted my smoker is being a little temperamental this morning.
    Here we go!!

    Were at the 12 hour mark. All butts are off except 2 that are lingering.
    . Nice bark. Everything has gone without a hitch.

    . Practice make perfect. Turned out great! Saves the jus to add tomorrow but biggest cool yet went great!!!!
