New from Buffalo

    Howdy -

    I am Tom, I live in Buffalo, NY and I've been doing meat related stuff (BBQ, Charcuterie, Sausage Making, Butchering) for about 5 years now. I am part of a competitive BBQ team called Nickel City Smokers. Our team recently competed in our 19th KCBS contest and finally took Grand Champion. We will be traveling to the American Royal in KC in October for the first time. 

    I also enjoy building things - and will be building my own smoker(s) this coming spring (just sourced my tanks). Most of my cooking is currently done on a Weber Performer and WSM's. 

    I look forward to reading and participating in this community!
