A buddy calls me out of no where and tells me he has a brand new WSM to get rid of. 100$ ??? I just couldn't pass it up. I did a run just lump charcoal and hickory with no meat on it do get rid of the new smell. Baptised it with ribs last week and a 9lbs pork shoulder this weekend. It took about 15-16 hours to get it up to 200 degrees. Not sure if its usually this long maybe I missed something lol. I was flying blind as I haven't had a chance to get a thermometer yet and I read the Webber dial can't be trusted. Regardless, came out pretty good.

Thanks guys. Yes it came out pretty nice if I may say so myself.

Question: I have the 18.5" WSM and I'm about to pull the trigger on a this webber rib rack. Are these anygood? And from your experience how many full slabs can I fit on a 18" if I get two racks like these? Just hoping there's enough room between the slabs for the air to flow and so that I'm still able to bast spray them as they smoke.

If you buy the rack remember they are too wide for baby backs

Really? Ok. Thanks for the heads up. So my best bet to smoke as many slabs as t the same time would be rolling them?

I have done both spares and BB's with those racks and have gone 5 full slabs. You may have to mess with the slabs a bit to get them in there with separation, but you can do it. I am cooking on a 22.5 WSM.
