Two beauties I smoked while wallpapering the bathroom.
I think I nailed 'em, if I must say so. Used hickory wood on top of Cowboy lump charcoal. Took 4 1/4 hrs at 215-220 degrees.

Looks really good!!! Nice color and a good bark!!! Did you use a rub?

I've switched to wrapping mine the last 1/3 of the time so I don't get the bark anymore.

Just olive oil, salt, and pepper on these. I do have a hybrid of an Emeril rub but the in-laws don't like it spicy. However they do dig the bark. They're like kids under a piñata grabbing at it. I'll have to try wrapping to see the results.
