Leftover Night at Casa de Foamheart!

     I can't smoke with the freezer full soooooo (I took note how fukll when looking for a home for the shrimps!).

    Tonight for your enjoyment we recommend the Homemade Pulled Pork Tamales covered in a smokie chili topped with cheeze, a smoked/cured chicken taco (Deconstructed using thin tortilla chips) topped with the usual lettuce tomato, onion ripe olives, green onions w/ sour cream on the side, AND a healthy helpping of refried pintos with cheeze.

    Damn I wonder what the rich poor folks is eattin!

    Other than the chicken taco which set in the crock pot last night the entire meal defrosted and on the plate, maybe 20 mins.

    I appoligizze for the dirty presentation but I tryed to open up the tamales so you could see them, those pieces had to be disposed of......LOL.

    Its a smoky Mexican Night !! Damn I need some Dos XX's. Maybe a Model

    Leftovers are delightful!

    You didn't throw the Tamales away  , did you [​IMG]  [​IMG]

    They would have been O.K. , just think how they would look in your tummy . A Tamale is a tamale , deconstructed or not. [​IMG]

    Methinks thou art being sarcastic.....LOL You know with Tex-mex you can just stack the food up till it falls over.

    Mmmm, like the look of them leftovers Foam ! :drool: I'd have to lean towards the Dos XX..... By the way, I'm available most evenings for Tex Mex leftover night ! :biggrin: Just sayin.... LOL

    First thank you guys for the kind words. Thank you.

    I want to 'splain why I posted my left overs. I see people cooking 5 lb. briskets and 3 pound butts that is fine but while you have a smoker smoking you should go for it. What you don't eat today or tomorrow or the next day you can freeze for two weeks and most up to 6 months. Then when you are rested and better prepared, you can make tamales, nachos, BBQ baked potatoes, stuffed peppers, etc etc etc.... There ar many ways to use cooked meats, its a shame we don't have a section here just for left-overs!

    When I smoke I am usually pretty basic, but when I do leftovers I will usually bring out the creative side and use the good stuff to make it. Since you are not shackled by time, you can step up a notch. Anyway....Thats why I post 'em.

    Its gotta cool off soon, I need to get after some sausage and andouille, and cracklins, and trotters and hocks, and..........

    I hate to be all greedy with my bacon too! LOL
