Hi, my name is Joe from Nashville. I just got a Masterbuilt XL propane smoker for Christmas.  I have never smoked anything, but have always loved the taste of smoked food. I have been browsing these forums for some time now, and since I officialy own a smoker now, thought it would be a good idea to join.  I am a firefighter (work with some great chefs that have serious smoking skills), and have tasted better than restaurant quality food from these guys. I know I can learn a lot from them, but know I can benefit from this site as well.  I seasoned my smoker today, and I am already anxious to smoke something tomorrow.  Any accessories you think I might need to go ahead and get would be appreciative. You know, the "must haves" for any smoker.  Thanks in advance

First off welcome to SMF there Joe. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

Thanks for the replies. I am sure I will enjoy this site, as well as gain a mountain of knowledge. Not if, but when I screw something up smoking, I can already tell that  there is enough knowledge here to correct any and all mistakes I would be making. I signed up for the e course and will take that. I will try and smoke something this week, and let everyone knows how the first smoke turns out.  I think I will probably start with chicken thighs.  I have watched guys at work smoke them and they seem pretty simple and are very flavorful. Maybe i should start with something relatively easy to boost the confidence. LOL
