I need a recipe

  1. I have been looking all morning for a italian sausage recipe. Can anyone help please

  4. italian sausage is just plain sausage with italian herb mix.
    The name confused the hell out of me when I first read it.
    Just thought i'd mention it as I spent ages trying to work out what 'italian sausage' actually was :)
  5. 5 lbs coarse ground pork shoulder
    1 TBS Salt
    1.5 TBS crushed fennel seed
    For Medium 1 TBS Hot Pepper Flakes
    1 TBS Black Pepper

    Mix ingredients together and either stuff in casings or make into patties and freeze.

    Italian Sausage

    Or just use all pork and substitute more pork for fat.

    10 lbs venison and fat as above (8&2) I like more fat.
    4 tbs salt
    2 cups ice water
    3 tsp fennel seed
    2tsp. coarse black pepper
    1 tbs sugar

    grind and mix, stuff into32-35 hog casings.

    Hot Italian

    8 lbs of meat add
    2 lbs pork fat or 3 for juicier
    Mix with
    4 Tbs salt
    2 cups ice water
    31tsp fennel seed
    2 tsp black pepper
    1 Tbls sugar
    1 Tbls crushed hot pepper seed
    1Tbls caraway seed
    1Tbls coriander

    Stuff into casings or use as bulk.
