Greetings....I happened to stumble across the forum while searching the net for something...can't remember now!

I have been smoking for about 12 years now. I started with a New Braunfels barrel grill. It didn't even have an offset, but I made some darn good Q with that grill.

I'd really like to get a Tejas smoker or a Klose.....but until I win the lottery...I'm using what I have...all in my sig.

Smoked about 6lbs of salmon yesterday in the little chief....came out great. I'll be doing a 20lb fresh ham this weekend...not cured, but I am going to brine it.

Welcome. Be sure to take lots of photos and show us your work. I'm doing all of my smoking on a Weber Kettle. There's lots of different methods being used on this site. Including one guy who made a smoker out of 2 flower pots. Anything goes.

I am working/living away from home for awhile...but I have my Little Chief with me for my smoking pleasure.

I'll be home on vacation for a week after Easter, and besides the 20lb fresh ham, I hope to do a fair amount of Q'in. Ribs for sure.

Tons of great info here! Looking forward to doing some bacon soon....and a batch of almonds too!

She's by Tejas and is about $1500. cheaper. She does a great job and holds heat very well. With a few mods. you can have a truly great smoker(sorry Dave Klose and the Gator bunch)
With a 20"X40" smoker chamber and the upright, you can cook and hold or slooow cook anything.
I preburn my wood and use the embers to cook with, cleaner smoke and no nasties to spoil the meat(soot-creasote,etc.) Gives a lighter smoke flavor too,not overpowering

Nice lookin' Tejas there bbqfans! It's not in my budget at this time...so I'll just have to covet yours:) Had been thinking of a Weber bullet too, as I really miss the flavor I got from long charcoal cooking. But, seems the price on those has skyrocketed too.
