Getting my BUTT in gear (Heavy Q-View)

  1. Well I woke up this morning at 5AM to get my Butt going.......then ummmmm the snooze alarm went off once......errrrr ok like 6 times.  So at 6AM I finally climbed out of bed [​IMG]   Great thing is I am not on a time crunch as this won't be used till Saturday. 


    Twin Butts got some more rub on them


    I can taste it NOW.


    Bye bye for now!!! 

    Each is 7.5 lbs. so this will be a long smoke.  I am using a mix of Pecan and Cherry this time.

    It is just hard to beat pecan smoke on anything!

  3. Thanks Foam.  Pecan is my wood of choice with Cherry as a close second. 
     
  4. Butt went in with IT of 35F and now sits at 97F [​IMG]   ONLY a 107 to go LOL

    Still smells so damn good in the backyard.......nothing like it I tell ya

    Some TBS love.  Kinda hard to see but it's there LOL


    Hit the mark in a little under 4 hours WOOT!!!! 


    Don't like to peek......but I HAD to!!!!

    Now we will go onwards and upwards to the Stall!!!

    In the meantime made a batch of Chef JJ's finishing sauce (first time using it) thanks JJ!!!

  10. I know right?  Im definitely stalled. Only climbed 3 degrees in the last hour and a half.  Not to worry though......another beer is at hand!
     
  11. I thought the same thing yesterday. I stalled. Had a beer. Then 10 hours later & 14 beers the stall ended.. lmao

    It was fun but my head hurts now... lol

  14. For the first timers wanting time info......

    I am now at 175F, it dropped a degree from 37 minutes ago. Now officially in the stall.  I would imagine in about 3 hours I will be coming out of it.

    Looking good! I like cherry and pecan south inhale to do a 50/50 mix! So good! Just vac packed my pulled pork I did Saturday, gonna make some fine Pazole once the hatch chiles get here!!!
     
  17. I couldn't stand the smell coming from my backyard any longer so I found some Vac sealed PP from last smoke and I am making Pulled Pork Nacho's for dinner.  Will be posting that too [​IMG]

    Damn stall is still in full effect......wait.......we seem to be moving up.  2 hours at 175F and now I am seeing 178F  YES!!!  [​IMG]

    What temp is you're smoker at? Did you inject or brine at all?
     
  19. Been running at 240 or so all day.  No brine.....no injection.....just a good ol dry rub (of my making)
