First Brisket On The Smoker.....Finally w/Qview

    I have a feeling my brisket smoking planets were miss aligned this morning, between a power failure, locking myself out of the house and my GF almost wiping out her garage with he car, it's been a interesting morning. With out really going into any details, lets just say that everyone and everything is okay now.

    Here's my brisket with the rub.



    It took me a while for the temps to come up on my SnP, I may have over modified it, right now the right side is dead on 225° and the left is about 215°, so I guess I can't complain. I put the thick side closer to the hatter side hoping it will equal out a bit.

    I'm going to be up LATE tonight because of my late start, I didn't get the brisket on until 1:46 today. I'm going to keep taking pics of the temp and time so we can see how it progresses.



    I was lucky to be ablw to trade my Rays tickets I had for tonight for the Sunday afternoon game. Either way I still have a fridge full of beer and plenty of snacks to pull me through and my neighbors cat Fred is always a good buddy.





    And to Vlap and Pineywood, I had that beer a little sooner than the brisket went on. [​IMG]

    well I hope you have better luck with the brisket than your morning went looks like you have a good supply of bud! have fun. Looking forward to more pics

    Nice start, need another beer to calm your nerves though. Just chug along & you'll be fine. Might want to send GF out for more beer though.LOL[​IMG][​IMG][​IMG]

    Yeah things are starting to settle down a bit now, my temps are finally come up and I have 235° on the left and 220° right. I wasn't sure about this Publix Greenwise Lump charcoal my GF bought, but it seems to be kicking in now. The little red marks on the therms are 225°



    The beer isn't all for me [​IMG], I was suppose to have a few people over tomorrow to watch the ball game but they're going to swing by tonight because were going to the game tomorrow. Gotta love good understanding friends.

    Gene, if I go through all that beer today, I don't think I should be playing with hot things.[​IMG]

    That beer was a good start for the morning ;)

    I will confess though. I only popped my first at 2pm. Playing with sharks with beer in the system is not a good thing.

    Brisket looked nice with the rub. Where is the follow up views?

    That smoke session with your brisket will help calm the nerves after such a rambunctious morning [​IMG] . The cat has already started to chill and with the stocked fridge, you're well on your way!!

    Thanks for all the great props guys, things are settling down, a few beers have seemed to help. [​IMG]

    Well here's the update, so far so good, my mods to my smoker have seemed to work, I only have about a 10° swing from left to right. [​IMG]

    I haven't opend the cooking chamber yet, I don't want to lose all the heat I've work hard at to go away. In about an hour I will though, and give it it's first mop and throw in some crab stuffed portabella mushrooms, I think I deserve it. [​IMG]




    I also made my bourbon BBQ sauce, the whole house smells lovely. Once I get through all this I'm going to post the recipe with some pics in another thread.
    EDIT: Oh yeah, I forgot to ask anyone about how much lump charcoal I could plan on going through. I've already polished off a 8 lb bag just now, and
    have another full bag. I have my GF picking up an extra bag just in case. Oh, and don't wear flip flops when dealing with a charcoal chimney with small pieces of hot lump charcoal that like to fall through the grate, ouch.

    Added a little snck to the mix with a quick mopping



    Is this the blue thin smoke that I'm shooting for?

    Place your bets! [​IMG] , will the temp hit 150°+ by 7:00 pm ? results in a few minutes.

    The brisket is up to 160° after being on the smoker for about 6 hours at 225°, this sound right? I'm waiting for the stall.

    You may get one of those that doesn't stall if you know your thermo is right go with it. If not do a quick boiling water check on it.

    I think everything will work out just fine..I find that if the day starts out bad.i just start on the beer a couple of hours earlier..catch the buzz and calm the nerves then slow down...but you will need more beer if friends are coming over..Good luck will check back in later to see how you're doing..

    thank you everyone for the support and comments, I would've never tackled this project without this site. [​IMG]

    I believe mt therm is okay, it's been stalled now at 165° for almost 2 hours, got side tracked (GF and family) and let my temp in the smoker fall a bit but I'm on it, "go baby go".

    Blacklab, the crab stuffed mushrooms were a big hit, I had some crab stuffed shrimp but that's another story. I'm goin with some bacon wrapped scallops in a bit and I'll try to post some pics later. The Rays beat the Tigers, and the beer is starting to take affect, my day has turned very positive. [​IMG]

    EDIT: It's still stalled at 165° @ 10:15pm I think I'm looking at a midnight pull.[​IMG]
