I injected 3 chicken breasts with Italian dressing wrapped overnight. Put Jeff's rub on them next morning. Smoked at 250 until chicken breasts reached internal temp of 140. Then I reduced temp to 225 and smoked until internal temp. reached 160. Wrapped in foil with apple juice and smoked until internal temp. reached 180. Rested in foil,towel,and cooler for 2 hrs. I diced one breast for wife's salad and pulled the other 2 for sammies with Jeff's Barbeque sauce. Jeff's Barbeque sauce put in the pulled chicken breasts. Finished product.
