Cheap turkeys and good results

  1. I bought a frozen turkey the week before Thanksgiving and it was the driest, leanest most disappointing turkey I have ever encountered. I roasted only a small portion and had frozen the rest. Short story is that I ground the breast and thigh meat and combined that with an equal amount od pork 50-50 trimming and made hot smoked Polish sausage. http://www.meatsandsausages.com/sausage-recipes/polish-hot-smoked

I turned out to be a good move with good results

  2. It looks tasty!

    Happy smoken.

Great save on the bird! The texture of that sausage looks really good!

That looks great, nice job and like cranky said that texture looks spot on.

  5. Notice the little bright orange spots in the mince? I grind a carrot to push the last of the meat through the grinder.
