Been away awhile......

  1. But I'm not gone
    Been busy with work and life in general as we all are.

    After many attempts at creating my own diy smoker I came across a Craigslist deal and now use a MES. Which has served me well, and if your just starting out I recommend this route to smoked happiness.

    I'm doin my 1st brisket for a birthday party and I'm near the finish line, will have Q view when it's ready.

  4. Question
    When smoking what temperature, how long, and when if you do, do you wrap it?

    My texture was great but it seemed to be not as moist as I wanted.
    But everyone enjoyed their meal.

    That looks great, nice job ! Had to edit, I was just lookin at a pulled pork thread & my brain didn't shift to brisket... My bad ! :biggrin: For brisket questions, I'd send a private message to gary s if he doesn't see your thread... He's a member here on SMF that is great at smoking brisket !
