Well the tree sure produced this year ... So any ideas as to what to do with them ? Jam ... jelly ... ???
 
I think RonP made some apricot spatchcocked chicken in the first part of this year. Search his threads or maybe someone else remembers.

Apricots are one of my favourite fruits, but they do have a unique flavor and lots of folks don't care for them~ cain't unnerstan' why

I'm thinkin' that when they get to the really ripe/soft/sweet point, mash them up and mix that in with some hot chiles and maybe a bit of fresh grated ginger- but just a bit! Also, need to have a good dose of Kosher or Sea salt in there with some cracked peppercorns.

At this point you'll have yourself a real Caribbean Jerk wet rub for your chicken or pork, and that is gonna taste mighty good!
 
I made apricot leathers, its been a while, but if I remember correctly, I pitted them, putem in a blender with a little rum, brown sugar, and cinnamon, and enough water to get to a consistency of mayo. Pour on to wax paper, cover with clear plastic rap and put it in the sun and let it dry. I don't how long it would last, around my house it was gone in just a couple of days.
 
Make a BBQ sauce!

Pit them, put into a pan, add a little buttter, cup or so of burbon (or something similar

) & some brown sugar. Simmer all that for a while then give it a whir in the blender. You now have a nice addition to add to your home made BBQ sauces!
 
I have made a gazillion fatties with apricot preserves and chunks of dried apricots. Everyone raved over them,, even used JD hot sausage and they were gobbled up.

Used in sauces, pork and chicken marinades, or just plain eatin.

thousands of uses and they are all good.
