i smoked some beef ribs yesterday, meat was a little tough but good. Lot of fat to. I smoked them for 5 hours and used almost a whole bag of wood chunks, like what walmart has.is this normal or would it be better to mix it with charcoal. thank you mike
 
Hi Mike, What kind of smoker do you have? It would be easier for us to answer if we knew that. Everybody has their own style and set up, but I'm sure someone will be familiar with what you have and be able to help.
