Whole spatchcocked chicken?

I generally smoke a whole spatchcock chicken at a higher temp, around 300, for about 2 hours, but that's for a 4-5 lb chicken. For a bird that large, at 250, I'd say at least 3.5 - 4 hours. For cooking that long, at that low of a temp, you'll also want to make sure you're spraying it down with apple juice or something, or basting it in some way, regularly (every hour or so) to keep the skin from getting leathery..

This is my first bird with the new element. Trying to see how it acts. Might turn it up to 300.
 
How long do you smoke a whole 6.25 lb chicken at 250 F?
I will be cooking to 165 F internal just trying to figure out a start time to be done around 6:00 PM.

Running at 250F will give you a good cook but your skin on the chicken won't be very appealing.

I usually run chicken at 300F for about 2/3 of the cook then run my cabinet up to 350F to crisp
the skin.

Spatchcock the chicken to get it done faster. 250F at 6 lbs should be 3 - 4 hours. Always go by IT and not time as everyone's smoker is a bit different.

Running 300 I would say around 2 1/2 - 3 hours. I do them all this time just like this in my propane rig and always have great results. Just a tip try to get seasoning up under the skin on the breasts and place pats of butter in there too. Cant go wrong! Good luck!

I like that. My dad would skin the bird rub it with a seasoning he concocted and sew the skin back on.
