I am considering smoking a deer meat loaf..... with cut onion, pieces of green pepper and dried sweet peppers..... some of my favorite seasoning.... little old bay, garlic.... cover it with some bacon strips and on the smoker.....

Sounds good to me. I'll be smoking a chuck roast tomorrow for some pulled beef.

You might want to add some ketsup and mustard to the mix for moisture. Venison is pretty lean.

I will probably coat the top with a little ketchup near the end.... I had my meat cutter bud add a little fresh beef fat to my burger.....

i was just going to say that a little fat was needed...

sounds good to me, when are we eating?..lol

the best burger i ever had was one made from moose...
