I used to watch a lot of cooking shows, and still have a few favourites that I watch from time to time. I came across The Mind of a Chef when I was out surfing the toobs and figured I'd re-watch them since it's been a long time. This episode was about how smoke creates flavour so naturally I jumped right in - not that I need to tell anyone here that smoke creates flavour... It was only a few minutes in before they started talking bacon and the old way of doing things with a dry cure. I immediately thought of SmokinEdge SmokinEdge . For anyone that wants to check it out, have a look at The Mind of a Chef. It's cued to the bacon part, but you can start it from the beginning.

Got me thinking that I need a dedicated fridge for my cured meat adventures as well as a much bigger smoker!
