Now that I've gone thru all my bluefish its time to start smoking some char.Its my go to when all the bluefish is gone.

A little bath in some white wine for a few hours and then dried.SPOG and few pinches of freshly ground coriander and dill seed and some chives.That beautiful cutting board in the backround is a chopsaw chopsaw masterpiece!Will post up some after smoke pics too.
