Pretty straight forward here, what’s the best method to safely defrost a whole chicken.? I moved it from freezer to fridge last night. Would like to smoke it tomorrow but not sure it will be defrosted in time.
Can I sit it in sink for a few hours? Room temp water? Sous vide?

If its not going to defrost by tomorrow, let it sit in the sink or a pot of tap water, I did it with a rack of ribs not that long ago, didnt take very long. Left them in the package and put room temp water in the pot to cover

I'm always a little weary about food defrosting outside of the fridge. What I do is put the chicken in a big stainless steel bowl and fill with water. Then I put that bowl in the fridge and it usually thaws out overnight no problem at all. If it's really large then maybe a day.

In the food service industry you put it in a sick or bowl of cold water and run a slow continuous stream of water in the sink or bowl. I would take them out of the package. If they are the standard 4 pound chicken or so, it shouldn’t take long at all that way.
