Where The River Runs Through It
I smoked a pastrami and really had no intentions of posting about it because it was a lot of cheating. I bought a corned beef brisket flat at Costco and came home, rinsed it, and crusted it with pepper and coriander. But I decided to post about it anyway because of the crazy ridiculous time it took to smoke this thing!

I started it at noon, thinking it might be done around supperish time since it was only a 3 pounder.

11 hours later it finally hit my target IT of 203°.

11 hours for a 3 pound brisket flat! :emoji_astonished:

I just let it ride and constantly told myself "It's done when it's done." It turned out delicious.

Since I posted on it anyway, I might as well add some Q-View.

Made a sammich with it today that Bearcarver Bearcarver might like: pastrami with lettuce, tomato, and horseradish infused mayo on a bagel bun.

What are some of the craziest smoke times y'all have experienced?
 
That's crazy! How much fluid was in that thing???? How much weight did it lose?

I cooked a brisket one time that took 24 hours to hit 200*....

I'm about to put a beef shoulder clod in the smokehouse; I'm looking @ 18~20 hours for that.

Oh my that's a long time :emoji_astonished: - And here I just threw 4 on: 2 3lb points and 3.2lb and 3.6lb flats....I'm hoping for 6-7 hrs... but they are not for today so if it takes longer so be it - looks tasty!
 
Looks delicious. Just looked at the corned beef briskets at local walmart yeaterday. Had it in hand but decided against for some stupid reason. Wasn't sure what I was going to do with it. :emoji_disappointed:
