great, Im going to do another batch this coming weekend. I got the recipe from somewhere on the internet...BI-MART GOT 3 1/2 POUNDS OF MIXED NUTS ON SALE FOR $11.99, NICE BUY!
SMOKED NUTS
4 CUPS OF MIXED NUTS
6 TBSP HONEY
3 TBSP SUGAR
1 1/2 TSP GROUND CINAMMON
1 T TSP GROUND CAYENNE PEPPER.....IM GOING TO KICK UP A NOTCH AND DO 2 TSP ON THE NEXT BATCH
2 TBSP MELTED BUTTER
1 TSP SALT ( IF USING UNSALTED NUTS)
START YOUR SMOKER OR PREHEAT THE OVEN TO 300. IF YOU ARE USING A WATER SMOKER, LEAVE OUT THE WATER. WE WANT TO KEEP THOSE NUT CRUNCH. LEAVE THE PAN IN HOWEVER, AS THIS WILL PROTECT THE NUTS FROM THE FIRE. CHOICE OF WOOD IS UP TP YOU. COMBINE ALL THE DRY INGREDIENTS, MIX THEM GOOD. THEN ADD THE HONEY, NUTS AND BUTTER, MIXED TO COAT, UNTIL ALL THE NUTS ARE COVERED.
PREPARE THE PAN YOU WANT TO SMOKE THE NUTS IN BY SPRAYING IT WITH A NON-STICK COOKING SPRAY. SPREAD THE NUTS OUT IN A SINGLE LAYER ON THE PAN. DONT PILE THEM UP OR THEY WILL JUST STICK TOGETHER IN A LUMP, AND THE BOTTOM LAYERS WONT BE EXPOSED TO THE SMOKE. THE RECIPE SAYS TO SMOKE OR BAKED FOR 20-25 MINUTES. ( I FOUND THAT IN MY SMOKER IT TOOK 3HRS TO GET THE SMOKE TASTE.ALSO THE NUTS SEEM SOFT WHEN I TOOK THEM OUT, BUT WHEN THEY COOLED DOWN IT WAS FINE)
REMOVE FROM THE SMOKER AND SPINKLE IMMEDIATED WITH WHITE SUGAR. THEY WILL NEED A GOOD HOUR OR SO TO COOL. STORE IN AN AIRTIGHT CONTAINER AND ENJOYED THEM.
