I am trying out my new jerky gun for the first time today.  I am smoking some flat jerky and some round sticks.  I have read thru a bunch of the treads and will be cooking at about 200 degrees and using the bend test.  The problem I have is my smoker does not make much smoke at 200 degrees; next time I will use a small plumbing torch to keep the chips going..

Here are some progress pictures.  Sausage is off and tastes great.  What is the best estimate for how long the jerky will take; I have been running the smoker at about 200 degrees and rotating the racks.

not sure how you kept the food on when you rotated but I bet you rotate it another 1/4 turn and EVERYTHING will fall off!!!!
 
Just pulled the meat off the smoker.  It tastes delicious.

Great job man - those turned out great. I love my gun just wish it was the bigger one. I am almost out of the stuff I did a while back so need to get back on it
