I will start a seperate thread for my build  Lets just say I found a gem to convert.  So I have a few questions as i've never done a electric build before.  Little info before I ask my questions.  It is a SS double door commercial fridge.  I plan on using the SS Flange heating element for a heat source.  PID controller, I want to have at least three digital probes, probley looking at a smoke daddy generator, or pellet pooper.  Custom paint job, and all the bells and whistles.  

1. Why doesnt anyone use a built in water pan in their electric smokers?  I plan on cold and hot smoking in mine.  Mostly hot.  

2.  I have never done the electric route before.  How do you know which PID to get? I plan on having a decent size housing to hold the PID's, I want like four outlets for plugging in different things on the outside of the box, I want to be able to see the temps of all the probes, four total.  

3.  Has anyone used the smoke daddy pellet pooper?  Just wondering if it would get hot enough to heat a 48" tall x 39" wide x 28" deep cabinet to 275 degrees.  

4.  After tearing out all the platic and rubber gakets, I have about a 5/8" gap betwen the door and the jamb.  For a stove rope should I go with 3/4" or 1".  Not ure how much it compresses.

I went with 5/8 on mine. I laid it on its back loosened all the hinges and adjusted nice and even. I'm smoking in it for the first time and its working beautifully.
