Hi there, Just found this site from a search and after a disapointing day, (I just returned a big pork shoulder today that had gone bad) and 4+ inches of rain for a few days, reading this site has given me some sunshine back. I'm gonna read as much as I can here for a while and learn how to negotiate my way around this site, but I'll be back with some questions I'm sure. I love to cook on wood! I have made several "cookers" I call them, really just grills made (welded) from junk around the shop. The little one pictured on my avatar was just broke in on Friday, only kiebalsa, potatoes, onions and green peppers in a pan but yummy. I was going to try my (bad) pork in a dutch oven on it but.... I got a lot of catching up to do here, esp reading up on building a smoker. Now that I'm here in the north, I'm missing the roadside "pit beef" and other BBQ that was available and much more handy down in the mid atlantic area that I lived in for many years. I love the climate and just about everything here but do miss the food of the south! They like to BOIL meat up here? and the churches have "bean suppers", WHAT THE .......?  I look forward to talking to/with many of you seasoned guys here in the future!

More like simmering it in soups, stews and chowdahs, Bub, unless you mean the traditional New England Boiled Dinner.
Yes Cliff, the "boiled dinner" is what I was refering to, and no disrespect intended, just not for me. I can see that the old timers, in the dead of winter, would have a hard time firing up the smoker! That wood is needed to stay warm!

To tell the truth it's not for me, either(too salty), but this old timer fires up the smoker all winter.

We will be heading north soon tho NH but closer to Maine .. I am sure we will retire up there ..
Welcome to the forum .. Yeah the food here is a lot different .. I originally come from Oregon .. Way different ..
