Checking in from just outside Asheville - new to the forum, off and on smoker for about 20 years, but looking to gain knowledge of building a brick smoker.

This weekend’s foray into all night pork butt / brisket smoking has left me very sleepy and also reignited (pun intended) my old dream of a brick smoker.

So the question I have right off is :

Is the thought that a brick structure would hold heat longer than my metal barrel smoker .. and thus a large coal base could be built up allowing the smoker to cook away while I sleep .. correct thinking?

I did however get to listen to a bunch of pre-24 hours of Le Mans race hype, which was fun to relive, as my son and I went to the race two years ago.

The outcome tasted decent - slightly on the dry side - I've got room for improvement.

Anyway - howdy, and looking forward to hearing opinions on the brick smoker from those who have gone or know about this route!

Welcome from Wisconsin. Would love to see what you come up with for your brick smoker. I wanted to build one but got too much junk in the back yard already.
