Picked up some Cornish hens to smoke Sunday. Realized I had 1 rack of baby backs in the freezer so figured I would do that as well. Really wanted some BBQ this weekend so the only thing I made to go with it was some sweet potatoes.

Started with rubing the hens and ribs. They all got salt and pepper. Then the ribs got some sweet chilli rub and the hens got a little webber original. With smoking these at the same time I didnt try and go for crispy skin on the hens. I was looking for bite through skin and fall of the bone. This way also alows the kids to easily eat the chicken off the bone.

Then into the smoker. It was running in the 275° range.
After a while they took on some good color.

I wrapped the ribs with a little butter and a slash of apple juice. Put a foil cover over the hens to get them fall apart. In the meantime I picked out some sauce to glaze with after they came out of the wrap. Went with franks sweet chilli for the ribs and a couple of Carolina sauces for the hens

Out of the smoker and unwrapped

I put a rack over the pan the hens were in and brushed on the sauces . then back into the smoker for a little while

Ribs cut up . then onto the plate. Ribs, hen and sweet potatoes.

Turned out pretty good. I really liked the sweet chilli glaze on the ribs. Almost turned into a candy like sticky crust.

Thanks xray! I like doing ribs often. Usually buy up a bunch of baby backs when our Kroger has them bogo. I dont do the little Cornish hens very often but they are kind of fun to do. And everyone gets their own little chicken. My oldest son thought that was pretty cool.
 
Beautiful piece of work on that meal Travis, big Like! Chicken and ribs go together like peanut butter and jelly, FOTB makes for some happy kids with a full belly. RAY

I tried that same sweet chili rub on some ribs last month. I totally agree with you. It had a great flavor and consistency. Your plate looks mighty fine. Great job and thumbs up.

Wow Travis that all looks amazing! Nice! Ribs look like perfect temp too. How did you like the hens? I do a lot of chickens but haven't done hens before. Might grab some next time I am at the store.

Thanks I really liked the sweet chilli. I'll be using it on some other stuff soon I think. Maybe some grilled shrimp.

Thanks! Those little hens are pretty good. I don't get much difference in flavor or texture from them and a normal sized chicken. But they are fun to cook and seve each person their own little chicken. I will say if your going for crisp skin ive had really good luck on others in the past. They have pretty thin delicate skin so they crisp up nicely. I didnt try on this cook because of doing a lower temp with the ribs.

Thanks John! Yep it would have been worth the drive from dayton! I would have thrown on a few more baby birds and another rack.

Thanks! It was just nice to have some decent weather and be able to use the drum! Meal was very satisfying!
