Picked up some Cornish hens to smoke Sunday. Realized I had 1 rack of baby backs in the freezer so figured I would do that as well. Really wanted some BBQ this weekend so the only thing I made to go with it was some sweet potatoes.
Started with rubing the hens and ribs. They all got salt and pepper. Then the ribs got some sweet chilli rub and the hens got a little webber original. With smoking these at the same time I didnt try and go for crispy skin on the hens. I was looking for bite through skin and fall of the bone. This way also alows the kids to easily eat the chicken off the bone.
Then into the smoker. It was running in the 275° range.
After a while they took on some good color.
I wrapped the ribs with a little butter and a slash of apple juice. Put a foil cover over the hens to get them fall apart. In the meantime I picked out some sauce to glaze with after they came out of the wrap. Went with franks sweet chilli for the ribs and a couple of Carolina sauces for the hens
Out of the smoker and unwrapped
I put a rack over the pan the hens were in and brushed on the sauces . then back into the smoker for a little while
Out of the smoker resting for a few minutes
Ribs cut up . then onto the plate. Ribs, hen and sweet potatoes.
Turned out pretty good. I really liked the sweet chilli glaze on the ribs. Almost turned into a candy like sticky crust.
