I have a bit of a newbie question if I may.  I just bought a huge brisket at my local butcher, and its way more than the 3 of us can eat. I figure Id smoke half now, and half at some later point when Im in the mood for more good brisket. My question is, if Im going to freeze half, should I freeze it as is (fresh?) or should I smoke it first then freeze it?  I dont care about firing up the smoker again later and doing it all over, that doesnt bother me, Im just looking for the best possible result in the end. Thanks for any tips!

I think I would tend to cut it in half and freeze it.  There should be no issue with freezing part of it. Now I have smoked it all, then pulled it all and vacuumed sealed several little pouches for sammies later. Those came out great.

I , too would smoke it whole and prep. for Vac-Sealing,freezing and boiling to serve. However there's only two of us here and it doesn't last long enough to Vac and freeze

Have fun and...
