So I picked up a turkey for $7 on sale. ( I think it was about 11#'s off the top of my head) been reading on here and it seems they don't take as long as I thought. (around 4 hours). I have a MES 30 ill probably run it at 275* since that is the max. I Don't plan on brining it. Just some Cajun injection and rub. Anything I should keep an eye out being its my first time. Also planning on using apple wood, not stuffing it. Just trying for something simple since it was cheap and my first Turkey
 
You can throw into the oven with some high heat or the gas grill to crisp the skin,
 
Sounds like a plan.
+1 on crisping it in the oven (I pull mine at around 150-155 breast temp and finish it in a 400 oven to 160, which markedly improves the skin.)

Thanks for the heads up guys. Turned out pretty good. Not quite as good fried but way better than baked
