Frozen Brisket

I've been smoking on a WSM for the past few years and have finally started to get the hang of brisket.  I've always used the prime briskets from Costco which I don't think are ever frozen.

I recently discovered a farm/butcher in my area (Mesa, AZ) that's raising no hormones/no antibiotics cattle on their ranch, and processing them down at the UofA.  From what the butcher tells me, they hang the beef for 3 weeks then process and flash freeze everything.  I've tried their short ribs and chuck roast (ground into burgers) and it was pretty good.

So, I want to try one of their briskets but I have a question about aging - everything I've gotten at Costco or other butchers has likely spent a few weeks in the cryovac wet aging to some extent.  With this butchers process, I think that step is missing since I'd be buying it frozen, and I wonder if it would affect the flavor of the brisket.  I figure I could thaw it in the fridge, leave it for a few weeks to wet age, and then smoke it - beef experts - what are your thoughts on the best way to handle a brisket like this?

Is it frozen in cryovac? If it is, there shouldn't be any issue with thawing it out and letting it age in your fridge, as long as the package hasn't been compromised, of course.
